Ingredients

Method

  1. Bring 5 cm of water to a gentle simmer in a saucepan. Choose a heatproof bowl that sits on top without touching the water.
  2. Off the heat, whisk the egg yolks and sugar in the bowl until pale and slightly thick, about 2 min.
  3. Set the bowl over the simmering water and pour in the marsala. Whisk constantly, moving around the base and sides, for 6–8 min, until the mixture triples in volume and falls from the whisk in a thick ribbon that holds for a few seconds. It should reach 70°C (160°F).
  4. If it starts to look grainy at the edges, lift the bowl off the heat for a few seconds while you keep whisking.
  5. Spoon straight into glasses and serve warm, with berries or crisp biscuits for dipping.
