Ingredients

Method

  1. Wearing gloves (green walnuts stain hands dark brown), cut each walnut into quarters.
  2. Put them in a large glass jar with the wine, spirit, sugar, vanilla and orange zest. Stir until the sugar starts to dissolve.
  3. Seal and leave in a cool, dark place for about 2 months, shaking the jar every week. The liquid turns almost black.
  4. Strain through a sieve lined with muslin or a coffee filter, bottle and leave to mellow for at least 1 more month.
  5. Serve chilled in small glasses as an apéritif.
