Ingredients

Method

  1. Dissolve the yeast and sugar in the milk and water. Mix with the flour, then add the lard and salt and knead for 10 min until smooth and soft.
  2. Cover and leave to rise in a warm place for 1–2 hours until doubled.
  3. Roll the dough out 1 cm thick and cut out rounds with an 8 cm cutter. Set them on a floured tray, cover and leave for 30 min.
  4. Heat a heavy frying pan (or a tigelle press) over medium-low heat. Cook the rounds for 4–5 min per side, pressing gently, until puffed and golden-speckled on both faces.
  5. Keep them warm in a cloth. Split each one open and fill with cunza (lard pounded with garlic and rosemary), prosciutto, salami or soft cheese.
