Ingredients

Method

  1. Mix the masa harina, salt and water into a smooth, soft dough. Cover and rest for 10 min.
  2. Heat the oil in a frying pan over medium heat and cook the onion and jalapeño for 4 min. Add the beans and mash them into a thick paste, cooking for 3–4 min until it holds its shape. Season with salt.
  3. Divide the dough into 8 balls and press each into a 14 cm tortilla.
  4. Spread a spoonful of beans in the centre and top with a little cheese. Fold three sides in to make a triangle, leaving a small opening in the middle, and press the edges.
  5. Cook on a hot comal over medium heat for 3–4 min per side, until golden and crisp at the edges.
  6. Serve hot with crema and salsa.
