Ingredients

Method

  1. Put the salmon in a small pan with the wine, bay and enough water to just cover. Bring to a bare simmer and poach for 5–6 min, until just opaque. Lift out and cool completely.
  2. Beat the crème fraîche and butter together until smooth.
  3. Flake the poached salmon into a bowl and fold in the smoked salmon, crème fraîche mix, shallot, lemon zest and juice and herbs. Keep it chunky. Season.
  4. Pack into a jar or small dishes and chill for at least 1 hour. Serve with toast, crackers or cucumber slices.
