Ingredients

• 300 ml manzanilla or fino sherry, well chilled
• 600 ml lemon-lime soda (e.g. Sprite or 7 Up), chilled
• 1 handful mint sprigs
• plenty of ice
• ½ Lemon, sliced (optional)

Method

1. Fill a jug with ice and add the mint, bruising the sprigs lightly with a spoon first to release their scent.
2. Pour in the sherry, then top up with the soda, using roughly 1 part sherry to 2 parts soda.
3. Stir once and serve in small glasses with a slice of lemon, if you like.

Tips

• Choose a pale, dry manzanilla or fino; sweet cream sherries make it cloying.
