Ingredients

Method

  1. Season the chicken well. Heat the oil and half the butter in a wide pan over medium-high heat and brown the pieces, skin-side down first, for 8–10 min until golden all over. Pour off most of the fat.
  2. Lower the heat, add the shallots and garlic and stir for 2 min without browning. Stir in the tomato paste and chopped tomatoes.
  3. Pour in the vinegar (stand back, it is pungent) and let it bubble for 3 min until reduced by half. Add the wine, stock and mustard.
  4. Return the chicken skin-side up, cover and simmer gently for 30 min, until the juices run clear and the meat reaches 75°C (165°F).
  5. Lift out the chicken. Boil the sauce for 5 min until syrupy, then stir in the cream and the rest of the butter. Season, pour over the chicken and scatter with herbs.
