Ingredients

15 ml Crème de cassis (blackcurrant liqueur)
125 ml Champagne or dry sparkling wine, well chilled

Method

Pour the crème de cassis into a chilled Champagne flute.
Tilt the glass and slowly top up with the cold Champagne so it mixes itself without foaming over. Serve straight away.

Tips

Swap the Champagne for a dry white wine, traditionally Burgundy Aligoté, and you have a classic kir.
Start with less cassis than you think: it is very sweet and easy to overdo.
