Ingredients

Method

  1. Pare the zest from 2 of the lemons in wide strips with a peeler, avoiding the white pith. Squeeze the juice from all 4; you need about 200 ml.
  2. Warm 200 ml of the water with the sugar and zest in a small pan over low heat, stirring until the sugar dissolves. Turn off the heat and leave to infuse for 10 min, then remove the zest.
  3. Stir in the rest of the water and the lemon juice. Pour into a wide, shallow freezer-proof container and freeze.
  4. After 1 hour, scrape and stir the half-frozen edges into the middle with a fork. Repeat every 30 min for about 2 hours more, until it is a mass of fine, slushy crystals.
  5. Spoon into glasses, garnish with mint, if using, and serve with straws and spoons.
