Ingredients

Method

  1. Bring a pan of salted water to the boil, add the nopales and simmer for 10–12 min, until they turn from bright to olive green and are tender.
  2. Drain into a colander and rinse well under cold water to wash away the slippery juices. Leave to drain and cool completely.
  3. Toss the cooled cactus with the tomatoes, onion, chilli, coriander, lime juice, oil, oregano and salt.
  4. Taste and add more lime or salt, then serve straight away or chill for up to a day. Crumble cheese over the top if you like.
