Ingredients

Method

  1. Divide the vinegar, soy sauce, zha cai and half the spring onion between two bowls.
  2. Heat the soy milk in a pan over medium heat, stirring, until it is steaming hot and just about to boil.
  3. Pour the hot soy milk into the bowls from a little height. Leave for 30 seconds without stirring: the acid will curdle it into soft, silky curds.
  4. Top with the youtiao, the rest of the spring onion, a few drops of sesame oil and chilli oil, and a pinch of white pepper. Eat straight away, while the youtiao is still crisp.
