Ingredients

Method

  1. Rinse the barley in several changes of water until the water runs clear.
  2. Put the barley, water, candied winter melon and pandan in a pot and bring to the boil. Lower the heat and simmer, partly covered, for 50–60 min, until the barley is soft and the liquid is cloudy and slightly thick.
  3. Taste and add sugar only if needed: the candied melon is already sweet. Remove the pandan.
  4. Serve warm, or cool, chill for at least 1 hour and serve over ice with a slice of lemon. The cooked barley can be eaten with a spoon or strained out.
