Ingredients

Method

  1. Pour the boiling water over the tea bag and steep for 5 min so it is strong and slightly tannic, like a whiskey stand-in. Remove the bag and let it cool completely; a few minutes in the fridge speeds this up.
  2. Put 60 ml of the cold tea, the vanilla, lemon juice, syrup and aquafaba in a shaker. Shake without ice for about 15 seconds to build the foam.
  3. Add plenty of ice and shake hard again for about 15 seconds.
  4. Strain into a rocks glass over fresh ice, let the foam settle on top and garnish with the lemon slice and cherry.
