Ingredients

• 25 ml fresh lime juice, plus wedges
• 4 mint leaves, plus a sprig
• 200 ml ginger beer, chilled
• 50 ml sparkling water (optional)
• 1 tsp Maple syrup (optional)
• Ice

Method

1. Put the mint leaves and lime juice (and maple syrup, if using) in a copper mug or tall glass and press the mint gently a couple of times.
2. Fill the mug with ice.
3. Pour in the ginger beer, then the sparkling water if you want it less sweet, and stir once.
4. Garnish with a lime wedge and a mint sprig.

Tips

• Choose a fiery brewed ginger beer; ginger ale is too mild to stand in for it.
• Check the label: a few craft ginger beers are fermented and contain a little alcohol.
