Ingredients

• 240 ml passion fruit juice or nectar
• 120 ml Pineapple juice
• 120 ml Orange juice
• 60 ml fresh lemon juice
• 10 ml Grenadine syrup (optional)
• 240 ml sparkling water, chilled
• 4 Maraschino cherries
• 4 pieces pineapple wedges, to garnish (optional)
• Ice

Method

1. Stir the passion fruit, pineapple, orange and lemon juices together in a jug, adding the grenadine for a deeper red.
2. Taste: passion fruit nectars vary, so add a little sugar syrup if it is too sharp.
3. Fill four tall glasses with ice, pour in the juice mix to two-thirds full and top with sparkling water.
4. Garnish each with a cherry and a pineapple wedge.

Tips

• Make the juice base ahead and keep it in the fridge for a day; add the bubbles just before serving.
• With fresh passion fruit, push the pulp of about 6 fruits through a sieve and top up with water to 240 ml.
