Ingredients

Method

  1. Heat the 3 tbsp oil in a large pan over medium heat. Cook the onion, carrot and celery with a pinch of salt for 10 min, until soft. Add the mushrooms and cook for 10 min more, until dry and starting to brown.
  2. Stir in the garlic, rosemary and tomato paste for 1 minute. Pour in the wine (if using) and let it bubble away, then add the lentils, tomatoes and soy sauce. Simmer for 25–30 min, stirring often, until thick. Season.
  3. For the white sauce, warm the 60 ml oil in a saucepan over medium heat, stir in the flour and cook for 1–2 min. Gradually whisk in the milk until smooth, then simmer for 5 min, whisking, until it coats the back of a spoon. Stir in the nutritional yeast, mustard, nutmeg and salt to taste.
  4. Heat the oven to 190°C (375°F). Spread a thin layer of ragù in a large baking dish, then add a layer of lasagne sheets, a third of the remaining ragù and a quarter of the white sauce.
  5. Repeat twice more, then finish with a final layer of sheets covered completely with the rest of the white sauce.
  6. Bake for 40–45 min, until bubbling and golden on top and the pasta is tender when pierced with a knife. Rest for 10 min before slicing.
