Ingredients

Method

  1. Pound the ginger, garlic and green chillies to a coarse paste. Heat the oil over medium heat, pop the mustard seeds, then add the asafoetida, curry leaves and paste and stir for 1 minute.
  2. Add the turmeric, potatoes and salt and mix well for 2 min. Off the heat, stir in the lemon juice and coriander. Cool slightly and shape into 6 balls, flattening them a little.
  3. For the garlic chutney, toast the garlic in a dry pan for 2 min until spotted, add the coconut and toast for 1 minute until golden. Pound or pulse with the chilli powder and salt into a coarse, red powder.
  4. Whisk the batter ingredients into a thick, smooth batter that coats the back of a spoon. Heat 5 cm of oil to 180°C (350°F).
  5. Dip each potato ball in the batter to coat completely and lower into the oil. Fry 2–3 at a time for 3–4 min, turning, until crisp and golden. Drain on paper.
  6. Slit the pav without cutting through. Spread one side with green chutney and the other with garlic chutney, tuck in a hot vada and press gently. Serve with fried green chillies.
