Ingredients

Method

  1. In a bowl, mix the turkey, grated onion and its juice, egg, breadcrumbs, Worcestershire, mustard, garlic powder, salt and pepper with your hands until just combined. Don’t overwork it or the burgers turn dense.
  2. With damp hands, shape 4 patties about 2 cm thick and a little wider than the buns. Press a shallow dip into the centre of each so they stay flat as they cook.
  3. Heat the oil in a large frying pan or griddle over medium-high heat. Cook the patties for 5–6 min per side, until browned and cooked through to 75°C (165°F) in the centre. Lay on the cheese for the last minute and cover the pan to melt it.
  4. Spread the toasted buns with mayonnaise and build the burgers with lettuce, tomato, red onion and pickles.
