Ingredients

Method

  1. Scrub the lemons, trim off the ends, cut them into quarters and pick out the pips.
  2. Blend the lemons with the sugar and 500 ml of the water for about 1 minute, until pulpy but not completely smooth.
  3. Pour into a jug, cover and leave in the fridge for 1 hour so the peel releases its oils.
  4. Strain through a fine sieve or muslin, pressing hard on the pulp. Stir in the remaining 1 litre of water and the orange flower water, then taste and add more sugar if needed.
  5. Serve very cold over ice with sprigs of mint.
