Ingredients

Method

  1. Halve the passion fruit and scoop the pulp and seeds into a blender with 250 ml of the water.
  2. Pulse 3 or 4 times, just long enough to loosen the pulp from the seeds without smashing them, which would make the juice bitter.
  3. Pour through a sieve into a jug, pressing on the seeds with a spoon to get all the juice out.
  4. Stir in the rest of the water and the sugar until dissolved, then taste and adjust. Serve over plenty of ice with a sprig of mint.
