Ingredients

Method

  1. Mix the flour, yeast, sugar and salt. Add the milk, egg and melted butter and knead for 10 min, by hand or in a mixer, until smooth and elastic. Cover and leave to rise for 1 hour until doubled.
  2. Mash the soft butter, brown sugar, breadcrumbs, vanilla (if using) and salt into a spreadable paste.
  3. Knock back the dough and divide it into 16 pieces. Roll each into a long oval or triangle about 15 cm long and spread with a heaped teaspoon of filling, leaving the edges clear.
  4. Roll up from the wide end into a log. Brush with milk, roll in the breadcrumbs and set seam-side down on lined trays, spaced apart.
  5. Cover and leave to rise for 30–40 min until puffy. Heat the oven to 180°C (350°F).
  6. Bake for 15–18 min until golden. A little filling will ooze out and caramelise, which is part of the charm. Cool slightly before eating.
