Ingredients

Method

  1. Heat the oven to 180°C (350°F) and butter a 20 x 30 cm baking dish.
  2. Beat the sugar and eggs with an electric whisk for 3–4 min until pale and thick. Beat in the jam, melted butter and vinegar.
  3. Sift the flour, bicarbonate of soda and salt together. Fold them into the egg mixture alternately with the milk until smooth.
  4. Pour into the dish and bake for 40–45 min, until risen, deep golden and a skewer comes out clean.
  5. A few minutes before it is ready, warm the cream, butter, sugar and hot water in a saucepan over medium heat, stirring until the sugar dissolves. Add the vanilla.
  6. As soon as the pudding comes out of the oven, prick it all over with a skewer and slowly pour over the hot sauce. Leave for 10 min to soak it all up, then serve warm with custard or ice cream.
