Ingredients

Method

  1. Blitz the prawns, garlic, ginger, egg white, cornflour, soy sauce, sugar, salt, pepper and sesame oil in a food processor to a coarse, sticky paste. Stir in the spring onion.
  2. Spread the paste thickly and evenly over the bread right to the edges. Press the paste side firmly into the sesame seeds so they stick.
  3. Cut each slice into four triangles.
  4. Heat 1 cm of oil in a frying pan over medium heat. Fry the toasts sesame side down for 2–3 min, until golden, then flip and fry for 1–2 min more, until the bread is crisp and the prawn paste is cooked through.
  5. Drain on kitchen paper and serve hot with sweet chilli sauce or soy sauce for dipping.
