Ingredients

Method

  1. Mix the flour, sugar and salt in a bowl and make a well in the middle. Add the eggs and half the milk and whisk to a smooth, thick batter.
  2. Whisk in the rest of the milk; the batter should be thick enough to hold its shape when dropped from a spoon.
  3. Heat a heavy frying pan or griddle over medium heat and wipe it with a little oil. Drop in tablespoons of batter, leaving space between them.
  4. Cook for 1–2 min until bubbles rise and pop on the surface and the underside is golden, then flip and cook for 1 minute more until risen and cooked through.
  5. Wrap in a clean tea towel to keep soft while you cook the rest. Serve warm with butter and jam.
