Ingredients

Method

  1. Blend the spice paste ingredients with a splash of water until smooth.
  2. Heat the oil in a large pot over medium heat and fry the paste for 3–4 min, stirring, until fragrant and no longer raw-smelling. Add the galangal, lemongrass and bay leaves and stir for 1 minute.
  3. Pour in the water or stock and bring to the boil. Add the carrot and beans and simmer for 5 min.
  4. Add the aubergine, tempeh and tofu and simmer for 5 min until the aubergine is soft.
  5. Stir in the cabbage, coconut milk, sugar and salt and simmer gently for 4–5 min, stirring now and then, until the cabbage is just tender. Do not let it boil hard, or the coconut milk may split.
  6. Taste and adjust the salt, then serve with rice or lontong (compressed rice cakes) and sambal on the side.
