Ingredients

Method

  1. Put the stock, dashi powder, soy sauce and ginger in a pot and simmer for 10 min. Fish out the ginger and taste for salt.
  2. Beat the eggs with a pinch of salt. Heat the oil in a non-stick pan over medium heat, pour in the egg in a thin layer and cook for 1–2 min, until just set. Roll it up and slice into thin ribbons.
  3. Fry the Spam matchsticks in the same pan for 3 min, until crisp at the edges.
  4. Cook the noodles in a separate pot of boiling water as the packet says, then drain.
  5. Divide the noodles between big bowls, ladle the hot broth over and top with Spam, egg ribbons, fishcake and spring onions.
