Ingredients

Method

  1. Heat the oil in a frying pan over medium-high heat and fry the onion and garlic for 2 min. Add the mince, curry powder and salt and cook for 5–6 min, breaking it up, until browned and cooked through. Cool for a few minutes.
  2. Beat the eggs in a wide dish and stir in the cooked mince, spring onion and chilli.
  3. Melt a quarter of the butter in a large frying pan over medium heat. Spoon a quarter of the egg mix into the pan in a rough shape the size of your bread.
  4. Straight away press one piece of bread, cut side down, onto the egg and press firmly. Cook for 2–3 min until the egg is set and golden and stuck to the bread, then flip and toast the crust side for 1 minute.
  5. Repeat with the remaining bread and egg. Squiggle chilli sauce, ketchup and mayo over the egg side, top with lettuce, cucumber and tomato, fold or cut into pieces and eat hot.
