Ingredients

Method

  1. Heat the oven to 200°C (400°F) and line a baking tray with baking paper.
  2. Unroll one pastry sheet on the tray and cut it into 9 squares, leaving them in place. Beat the cream cheese with the lime zest, if using.
  3. Put a spoonful of cream cheese and a slice of guava paste in the middle of each square, leaving a 1.5 cm border. Brush the borders with egg.
  4. Lay the second sheet over the top and press firmly around each mound to seal, then cut along the lines to separate. Crimp the edges with a fork.
  5. Brush the tops with egg, cut a small slit in each and sprinkle with sugar. Bake for 18–20 min, until puffed and deep golden.
  6. Cool for 10 min before eating: the filling is molten.
