Ingredients

Method

  1. Mix the yogurt, ginger, garlic, spices, lemon, oil and salt into a thick marinade. Fold in the paneer, onion and pepper and leave for 30 min.
  2. Thread onto skewers or spread on a lined tray and grill under a hot grill (or in a very hot pan) for 8–10 min, turning once, until charred at the edges. Set aside.
  3. For the masala, heat the oil and half the butter in a pan over medium heat. Add the cumin, then the onion, and cook for 6–8 min until soft and light golden. Stir in the garlic and ginger for 1 minute.
  4. Add the tomatoes and cashews and cook for 8–10 min, until the tomatoes collapse. Cool for a few minutes, then blend until very smooth.
  5. Return the sauce to the pan with the remaining butter, chilli powder, coriander, sugar and salt. Simmer for 5 min, stirring, then add the water and bring back to a gentle bubble.
  6. Add the grilled paneer and vegetables, the garam masala, kasuri methi and cream. Simmer for 3 min, just until hot. Scatter with coriander and serve with naan or rice.
