Ingredients

Method

  1. Stir together the salsa ingredients and set aside while you cook the meat.
  2. Heat the oil in a frying pan over medium heat and soften the onion and garlic for 3 min.
  3. Add the beef, turn up the heat and fry for 4–5 min, breaking it into fine crumbs, until browned with no pink left.
  4. Stir in the chilli powder and cumin for 30 seconds, then add the ketchup, Worcestershire, soy sauce and sugar. Simmer for 2 min until the mince is glossy and almost dry.
  5. Spoon the rice into wide bowls, add a layer of lettuce, then the hot beef, cheese and salsa. Finish with avocado and hot sauce if you like.
