Ingredients

Method

  1. Mix the flour, egg, condensed milk, melted ghee and salt, then add the water gradually and knead for 10 min until very smooth and soft. Divide into 6 balls, put them in a tray, pour the oil over to coat and cover. Rest for at least 4 hours, or overnight in the fridge (bring back to room temperature before stretching).
  2. For the filling, cook the beef with half the onion, the garlic, curry powder and salt in a dry pan over medium-high heat for 8–10 min until browned and dry. Cool, then mix in the rest of the onion and the spring onion.
  3. Oil a large clean worktop. Press a dough ball flat, then stretch it out gently with your fingertips, lifting and pulling from the edges, until it is about 50 cm across and almost see-through. Small holes do not matter.
  4. Heat a large flat griddle or frying pan over medium heat with 1 tbsp ghee. Beat one egg with a sixth of the beef mix and pour it into the middle of the stretched dough, spreading it into a 20 cm square.
  5. Fold the four sides of the dough over the filling to make a parcel, then lift it carefully onto the hot pan, seam side down. Cook for 4–5 min per side, pressing with a spatula, until crisp, golden and the egg inside is set.
  6. Repeat with the rest. Cut into squares and serve hot with the pickled onion and a little curry gravy for dipping.
