Ingredients

Method

  1. Stir the marinade ingredients together in a container just big enough to hold the eggs.
  2. Lower the eggs into a pan of boiling water and cook for 6–7 min for jammy yolks, stirring gently for the first minute so the yolks stay centred.
  3. Move the eggs straight into iced water for 5 min, then peel them carefully.
  4. Submerge the eggs in the marinade, cover and refrigerate for at least 4 hours, or overnight for the best flavour, turning them once.
  5. Serve halved over hot rice with a spoonful of the marinade and its chopped chillies.
