Ingredients

Method

  1. Put the cracked monk fruit, shell and all, in a pot with the water and longans and bring to the boil.
  2. Lower the heat and simmer, partly covered, for 30 min, until the liquid is a deep amber and tastes sweet and caramel-like.
  3. Add the chrysanthemum and simmer for 5 min more. Taste: the fruit is very sweet, so add rock sugar only if you need it.
  4. Strain and serve warm, or chill it and serve over ice.
