Ingredients

Method

  1. Scrub the limes well. Cut off the hard ends, then cut each lime into eighths and remove the white core and any pips.
  2. Put the limes, cold water and sugar in a blender and pulse 5–6 times, only for about 10 seconds in total. Longer blending pulls bitterness from the white pith.
  3. Pour through a fine sieve into a jug, pressing lightly on the pulp, then discard the pulp.
  4. Whisk in the condensed milk, taste and add more sugar if you like. Pour over plenty of ice and serve straight away while it’s frothy.
