Ingredients

• 1 juicy lime (about 25 ml juice), halved
• 30 ml Simple syrup (1:1 sugar and water)
• 180 ml chilled soda water
• ice cubes

Method

1. Squeeze both lime halves into a tall glass and drop one squeezed half in.
2. Add the syrup and fill the glass with ice.
3. Top up with the soda water, stir gently once and serve with a straw.

Tips

• For a raspberry lime rickey, a New England favourite, swap the simple syrup for raspberry syrup.
• The original gin rickey adds 45 ml gin and skips the syrup; a dash of Angostura bitters also adds alcohol.
