Ingredients

Method

  1. Rinse the wheat berries, cover with plenty of cold water and leave to soak overnight.
  2. Drain, cover with fresh water by about 5 cm and add the salt. Bring to the boil, then simmer for 1 hour, or until the grains are tender but still chewy. Drain and cool.
  3. Meanwhile, put the poppy seeds in a bowl, cover with boiling water and leave for 30 min. Drain them through a very fine sieve or a cloth.
  4. Grind the drained poppy seeds in a spice grinder or food processor in batches, until they turn pale grey and creamy and release their milk.
  5. Warm the honey with the orange juice just enough to loosen it. Mix the wheat, poppy seeds, raisins, nuts, peel and orange zest in a big bowl, then stir in the honey mixture.
  6. Taste and add more honey if you like it sweeter. Chill for at least 1 hour so the flavours meld, and serve cold or at room temperature.
