Ingredients

Method

  1. Stir the yeast and a pinch of the sugar into the warm milk and leave for 5 min until foamy.
  2. Mix the flour, sugar, salt, anise and sesame in a large bowl. Add the eggs, butter, orange flower water and yeasty milk and knead for 10 min to a soft, smooth, slightly tacky dough. Add a splash more milk if it feels stiff.
  3. Cover and leave to rise in a warm place for 1½ hours, until doubled.
  4. Divide into 12 pieces, shape into tight balls and set well apart on lined trays. Flatten slightly, cover and leave to rise for 45 min, until puffy.
  5. Heat the oven to 190°C (170°C fan, 375°F). Brush the rolls with the egg glaze and sprinkle with sesame.
  6. Bake for 15–20 min, until deep golden and they sound hollow underneath. Cool on a rack.
