Ingredients

Method

  1. Soak the glass noodles in warm water for 30 min, until soft and bendy. Mix the sauce ingredients together.
  2. Blanch the chicken in boiling water for 3 min, then drain and rinse.
  3. Put the chicken, sauce, water and dried chillies in a wide pot and bring to the boil. Cover and cook over medium heat for 15 min.
  4. Add the potatoes, carrot and mushrooms, stir and cook covered for 12–15 min, until the potatoes are nearly tender and the chicken reaches 75°C (165°F).
  5. Add the onion, green chilli and drained noodles. Cook uncovered for 5 min, stirring, until the noodles turn glassy and soak up the sauce. Add a splash of water if it gets too dry.
  6. Stir in the spring onion and sesame oil, sprinkle with sesame seeds and serve in the middle of the table with rice.
