Ingredients

Method

  1. Bring the hot water to the boil, then let it stand for 2 min to cool to about 80°C (175°F); boiling water makes green tea bitter.
  2. Pour it over the tea bags, mint and ginger in a heatproof jug and steep for 3 min, then lift out the tea bags.
  3. Stir in the honey while the tea is warm so it dissolves, then add the cold water and lemon juice.
  4. Chill for 1 hour, strain out the mint and ginger, and serve over ice with lemon slices and fresh mint sprigs.
