Ingredients

Method

  1. Put the ginger and water in a small pan, bring to the boil and simmer for 8 min, until the water tastes warm and spicy.
  2. Add the tea bag (if using) for the last 2 min, then lift it out.
  3. Take the pan off the heat and let it cool for a few minutes, so it is hot but no longer boiling; very hot water makes lemon taste bitter and dulls the honey.
  4. Divide the lemon juice, lemon slices and honey between two mugs, strain in the ginger tea and stir. Serve hot, or chill and pour over ice.
