Ingredients

Method

  1. Spread peanut butter on two slices of bread and top each with a second slice to make two thick sandwiches. Press the edges together firmly.
  2. Whisk the eggs with the milk and vanilla in a shallow dish. Soak each sandwich for about 30 seconds a side, including the edges, so the egg seals them.
  3. Heat the oil in a frying pan over medium heat. Fry the toasts for 2–3 min a side, plus a few seconds on each edge, until deep golden and puffed.
  4. Drain briefly on kitchen paper, cut in half, top with a slab of butter and pour over the syrup. Eat hot, with a cup of milk tea.
