Ingredients

Method

  1. Put the water, anchovies, kombu and radish in a pot. Bring to the boil, take out the kombu, then simmer for 10 min more and lift out the anchovies. Keep the radish in the broth.
  2. Mix all the seasoning ingredients with 3 tbsp of the broth to make a paste.
  3. Lay the cabbage, sprouts and onion in a wide pot and arrange the clams, mussels, prawns, squid, fish and mushrooms on top. Pour in the hot broth with the radish and stir in the paste.
  4. Bring to the boil over high heat, cover and cook for 6–8 min, until the shells open, the prawns turn pink and the fish flakes. Throw away any shells that stay shut.
  5. Add the spring onions and chilli, taste and season with salt and pepper. Serve bubbling from the pot with bowls of rice.
