Ingredients

Method

  1. Carefully slide the tofu out of its box and drain on kitchen paper for a few minutes.
  2. For a firmer, warmer tofu, lower it into gently boiling salted water for 1–2 min, then lift out and cool slightly. Otherwise use it straight from the fridge.
  3. Cut the tofu into 2 cm cubes and put them in a shallow bowl.
  4. Sprinkle with the salt and spring onion, drizzle with sesame oil (and chilli oil if you like) and fold very gently so the cubes stay whole. Serve straight away.
