Ingredients

Method

  1. Heat the oil in a pot over medium-high heat and stir-fry the beef with the garlic for 2–3 min, until it loses its pink colour.
  2. Turn the heat down, add the gochujang, gochugaru and doenjang and stir for 1 minute so the pastes fry and darken slightly without catching.
  3. Pour in the water, add the potatoes and bring to the boil. Simmer for 10 min, skimming off any foam.
  4. Add the onion, courgette and mushrooms and simmer for 8–10 min more, until the potatoes are tender and starting to thicken the broth.
  5. Slide in the tofu, season with soup soy sauce and fish sauce, and simmer for 5 min. Finish with spring onion, chilli and black pepper and serve with rice.
