Ingredients

Method

  1. Bring the water to the boil, then let it cool for about 1 minute to roughly 85°C (185°F). Boiling water makes green tea bitter.
  2. Pour it over the genmaicha in a teapot or jug and steep for 3 min, a little longer than usual, so the tea stands up to the milk.
  3. Meanwhile, heat the milk until steaming and froth it with a milk frother or by shaking it in a sealed jar.
  4. Strain the tea into mugs, stir in the sweetener and pour the frothed milk on top.
