Ingredients

Method

  1. Fry the peanuts in a little oil over medium heat for 5–6 min, stirring all the time, until golden (or roast them in the oven). Lift them out and let them cool; fry the garlic and chillies in the same oil for 1 minute.
  2. Pound or blend the garlic, chillies and terasi (if using), then add the peanuts and grind to a coarse paste. Blend in the palm sugar, tamarind, kecap manis, salt and enough hot water to make a thick, pourable sauce. Stir in the lime juice and taste: sweet, tangy and gently hot.
  3. Boil the potatoes in salted water for 15 min until tender. In another pan, boil the eggs for 9 min, then cool them in cold water, peel and halve.
  4. Bring a pot of salted water to the boil and blanch the vegetables one kind at a time: green beans for 3 min, cabbage for 2 min, spinach for 30 seconds and bean sprouts for 20 seconds. Drain each batch and spread out to cool.
  5. Heat 1 cm of oil in a frying pan over medium-high heat and fry the tofu and tempeh for 5–6 min, turning once, until golden and crisp. Drain on paper.
  6. Arrange the potatoes, vegetables, cucumber, tofu, tempeh and eggs on plates. Pour over the peanut sauce and scatter with fried shallots, with krupuk on the side.
