Ingredients

Method

  1. Put the coffee powder in the upper, perforated chamber of a South Indian coffee filter and level it. Set the pressing disc on top without packing it hard.
  2. Pour in the boiling water, cover and leave to drip into the lower chamber for 10–15 min. You will get a small amount of thick, dark decoction.
  3. Heat the milk until it just boils and froths up.
  4. Put the sugar in each tumbler and add 3–4 tbsp decoction, then top up with hot milk (roughly 1 part decoction to 3 parts milk).
  5. Pour the coffee back and forth between the tumbler and the dabara (or two cups) from a height a few times, until frothy. Serve at once.
