Ingredients

45 ml reposado or blanco tequila
15 ml fresh lime juice, plus a wedge to garnish
90 ml spicy ginger beer, chilled
15 ml Crème de cassis (blackcurrant liqueur)
Ice

Method

Fill a highball glass with ice and pour in the tequila and lime juice.
Top up with the ginger beer and stir gently once.
Slowly pour the crème de cassis over the top; it sinks through the drink in a red cloud. Garnish with a lime wedge and stir before sipping.

Tips

Ginger beer hides the tequila well, so keep it to one measure per glass and drink water alongside.
For an alcohol-free version, try the virgin mule with a splash of blackcurrant cordial.
