Ingredients

Method

  1. Put a 25 cm cast-iron or ovenproof frying pan in the oven and heat it to 220°C (425°F).
  2. Blend or whisk the eggs, flour, milk, sugar, salt, vanilla and nutmeg for 1 minute, until completely smooth and a little frothy.
  3. Carefully take out the hot pan, add the butter and swirl until melted and foaming. Pour in the batter all at once and return the pan to the oven straight away.
  4. Bake for 16–20 min without opening the door, until hugely puffed, deep golden at the edges and set in the middle.
  5. Bring it to the table at once (it sinks quickly), dust with icing sugar and serve with lemon wedges, berries and maple syrup.
