Ingredients

• 60 ml Dark rum
• 100 ml ginger beer, chilled
• 1 lime wedge (optional)
• Ice

Method

1. Fill a highball glass with ice and pour in the ginger beer.
2. Slowly pour the dark rum over the back of a spoon so it floats on top in a dark layer.
3. Squeeze in a lime wedge if you like and serve with a stirrer, so the drinker can mix it.

Tips

• Use 40 ml rum and more ginger beer for a lighter version.
• Gosling’s Black Seal is the traditional rum, but any rich dark rum works.
